What useful and unusual things can be prepared from buckwheat?

Buckwheat is the perfect dish for a PP diet because it combines well with other healthy foods. In addition, buckwheat is a slow carbohydrate – in a proper diet, this is especially important.

Buckwheat can be eaten with vegetable salads, with stewed, baked vegetables, with berries and ghee oil. You can boil buckwheat with coconut or almond milk. But what to do if you are bored with all the “traditional” dishes with buckwheat? Here are a few recipes.

The most popular type of buckwheat – yadrya, that is, roasted or steamed grains. But there is also green buckwheat, it is considered the most useful, because it retains more nutrients. To properly cook green buckwheat, it must first be soaked, and then boiled for 5-10 minutes.

Buckwheat zrazy with braised cabbage

ستحتاج إلى:

  • buckwheat (dry) – 70 g ;
  • water – 150 ml;
  • cabbage – 150 g;
  • ghee oil – 25 g;
  • salt – to taste;
  • herbs – to taste.

Boil buckwheat, chop it with a blender. Cut cabbage into straws, put it in a baking mold, salt, add water and ghee oil, wrap the mold in foil and bake until cabbage is ready, stirring it occasionally.

Then take shredded buckwheat, make a mold and put in the center of the stewed cabbage with herbs, wrap the filling in a buckwheat flatbread and give the shape of zrazy. Heat a frying pan and quickly fry on both sides in coconut oil or ghee oil. Then bake in the oven at 170 degrees for 5-10 minutes.

Buckwheat fritters

ستحتاج إلى:

  • buckwheat – 100 g;
  • water – 200 ml;
  • egg – 2 pcs;
  • flax flour – 1 tbsp;
  • salt – to taste;
  • ghee oil – 50 g;
  • sweetener – to taste;
  • berries – 100 g.

Boil buckwheat. Add water, eggs, flour and mix thoroughly. On a baking tray greased with ghee oil, place the molded fritters and bake at 170 degrees Celsius for 10-15 minutes.

Crush the berries with sweetener and serve with the fritters.

Buckwheat cookies

ستحتاج إلى:

  • buckwheat flour – 150 g;
  • coconut milk – 150 g;
  • flax bran – 1 tbsp;
  • olive oil – 1 tsp;
  • salt – to taste;
  • sweetener (honey, date syrup, topinambour syrup) – to taste;
  • nuts (walnuts, almonds, hazelnuts, macadamia) – 50 g.

Mix first the dry ingredients (buckwheat flour, bran, salt, chopped nuts). Then add olive oil, sweetener. Mix everything well and gently pour in the coconut milk. Knead the dough.

Preheat the oven to 150 degrees. On a baking tray lined with parchment or a silicone mat, place the dough in the form of cookies and bake until cooked 25-30 minutes. The main thing is not to overdry.

Buckwheat and spinach pancakes

  • Green buckwheat flour – 100 g;
  • egg – 2 pcs;
  • coconut milk – 250 g;
  • salt – to taste;
  • coconut oil – 20 g;
  • spinach – 50 g.

Pick the spinach (you can use freshly frozen spinach). Rinse thoroughly and chop. Add salt and eggs to the spinach and chop in a blender. Then add flour and coconut milk, knead dough, add coconut oil. Let the dough stand to allow the buckwheat flour to swell. If it is too thick, you can add a little water.

Bake the pancakes on a non-stick griddle for three minutes on one side and about a minute on the other, so that the pancake remains a beautiful green color. You can serve either a sweet version (with berries) or a hearty version (for example, with salmon and a poached egg).
