Pumpkin salad recipe with orange dressing

A dish of nutritious and hearty vegetable strengthens the immune system and has a positive effect on the nervous system.

Pumpkin is rich in antioxidants, vitamins and minerals. In 100 g contains about 60 kcal, 30 g of carbohydrates and 2 g of protein, which makes it a suitable product for diet.

Ingredients

  • pumpkin, peeled from the skin and seeds – 200 g;
  • olive oil – 60 ml;
  • salt to taste
  • honey – 20 ml;
  • ground cinnamon – 2 g;
  • fresh spinach – 50 g;
  • fresh carrot – 20 g;
  • celery stalk – 20 g;
  • orange juice – 30 ml;
  • lemon slice – 1 pc.

Preparation

Step 1.

Cut pumpkin into large cubes, add salt, cinnamon and honey, mix thoroughly.

Step 2.

On a tray spread parchment, lay out the pumpkin, cover with foil and put in a preheated to 180 degrees Celsius oven for 15-20 minutes.

Step 3.

Prepare the sauce: mix the juice of the orange with olive oil, add a little lemon juice and bring to taste with salt.

Step 4.

Rinse the spinach and pat dry. Rinse the carrots and celery stalk, peel and thinly slice, then mix with the spinach and dressing. Whisk the sauce before dressing until smooth.

Step 5.

When the pumpkin is cooked, open the foil and leave in the oven for another three to five minutes to allow a crust to form.

Step 6.

Arrange the pumpkin and the rest of the vegetables on a plate.
