How were pancakes cooked in the USSR?

In Soviet times, the catering industry worked according to GOST standards, only some restaurants allowed themselves to deviate from the norm. Similar recipes are used today, but these days there are many more variants of pancakes depending on taste preferences: on water, without yeast, with a lot of eggs, on corn flour. Perhaps the key difference is that margarine has been replaced with butter, and some do not use it at all.

Složení

  • wheat flour – 66 g;
  • chicken egg – 1/4 pcs. or 10 g;
  • sugar – 4 g;
  • table margarine – 5 g;
  • milk – 110 ml;
  • live yeast – 4 g;
  • salt – 1,5 g.

Step 1.

In 1/2 part of milk dissolve sugar, salt, add pre-diluted yeast. Strain the mixture through a sieve. Heat the rest of the milk to 35-40°C and pour it into the rest of the mixture.

Step 2.

Add flour and egg to the milk and mix until homogeneous. While mixing, pour in the melted margarine. Leave the dough for two to three hours at room temperature, occasionally stirring (kneading).

Step 3.

Cast iron skillet is well heated, grease and bake pancakes on both sides.
