Zucchini is appreciated for its low calorie and high nutrient content. In the culinary world, they are known as a universal ingredient that can be used to decorate a large number of dishes. We have prepared several curious recipes from zucchini, so that you can diversify your summer dinners with flavor and benefit.

Zucchini is rich in vitamins B1, B2, PP, C, folic and pantothenic acids, potassium. It contains little coarse dietary fiber – compared to other vegetables. This allows you to add them to the diet of those who have diseases of the gastrointestinal tract, were surgeries on the digestive organs.

Zucchini has diuretic properties, and the presence of pectin substances in it makes it an excellent assistant in the prevention of atherosclerosis and recovery of the body. Specific enzymes in the composition help with liver diseases and promote the separation of bile.

This vegetable has a minimal number of contraindications, but because of the high potassium content in the composition, I would not recommend it to people with impaired potassium output to avoid the formation of stones. And also those who have exacerbation of ulcers, gastritis, pancreatitis. In raw form, it is undesirable to consume large quantities of this product to people with increased secretion of gastric juice and with renal failure.

Cheese salad with lemon and zucchini

Budete potřebovat:

  • medium zucchini – 4 pcs;
  • olive oil – 2 tablespoons;
  • garlic – 2 grated cloves;
  • lemon – 0,5 pcs;
  • ricotta cheese – 3 tbsp;
  • mozzarella – 1 ball…;
  • mint leaves to taste;
  • sůl podle chuti;
  • pepper to taste.

Lemon, zucchini and Italian cheese is a combination of flavors that will pleasantly surprise your summer table guests. To start, roast the zucchini for 5-7 minutes, adding olive oil and garlic. Then squeeze the juice from the lemon, remove the zest and add it to the plate with the roasted zucchini. Finally, lay out the pieces of mozzarella and ricotta, decorate the salad with mint leaves, salt and pepper to taste. The dish is ready!

Pie with zucchini and lime

Budete potřebovat:

  • zucchini – 250 g;
  • limetka - 1 ks;
  • eggs – 3 pcs;
  • vegetable oil – 125 ml;
  • sugar – 150 g;
  • flour – 225 g;
  • baking soda – 0,5 tsp;
  • powdered sugar – 0.5 tsp.

Zucchini and lime pie is a sweet and satisfying way to eat vegetables. Preheat the oven to 180 degrees. Whisk together the eggs, vegetable oil and sugar. Add the flour, baking soda and baking powder. Grate the zucchini and lime and top the muffin mixture with them. Then bake everything for 45-55 minutes, until the center of the cake is done.

In parallel, you can prepare the glaze from lime juice and zest, granulated sugar. When the cupcake is ready, cover it with the glaze and let it cool.

Lydia: Zucchini is valued for being a dietary product, and there is so much sugar! You can replace it with topinambour syrup or dates (at least there is fiber there). And the ideal oil for high temperature will be coconut oil or avocado oil.

Eggplant cream soup

  • bean rapeseed oil;
  • leeks – 400 g
  • zucchini – 450 g
  • spinach – 400 g;
  • goat cheese – 150 g;
  • a few basil leaves.

Eggplant cream soup will diversify the lunches of vegetarians in the last month of summer. To start, finely chop and fry the leeks so that they soften. Then add the zucchini, cover the pan and wait 10 minutes. Add more oil if it seems necessary. Next, add the spinach to the skillet and cook for another five minutes. Remove the contents of the skillet, whisk together with the goat cheese and basil. Allow the dish to cool. At lunch time, reheat the soup and eat it with rye bread.
