What to replace mayonnaise in holiday salads

We offer healthy alternatives to classic recipes of dishes.

On the New Year’s table will definitely be traditional salads with mayonnaise: olivier, fish under a fur coat, mimosa. Such multi-component dishes are hard to digest, because there are incompatible nutrients in the composition. For example, in olivier it is animal protein (meat or sausage) and carbohydrates (boiled vegetables).

Mayonnaise is the main villain of the New Year’s feast. Even a light vegetable salad turns into a calorie bomb if you add a few spoonfuls of fatty sauce to it. I suggest replacing mayonnaise with a healthy alternative – homemade sauces.

I recommend preparing more simple salads and appetizers, dress them with raw oil, lemon juice, spices and herbs, and replace store-bought mayonnaise with homemade sauces.

I offer six variants of sauce, which will be suitable for dressing an olivier salad.

Coconut dressing with greens

Ingredients:

  • coconut yogurt – 200 g;
  • dried garlic – a pinch;
  • fresh mint leaves – 15 g;
  • salt – 5 g;
  • lemon zest – 1/2 pc.

Method of preparation:

  1. Mix all ingredients in a bowl and whisk well with a fork.
  2. Chill the sauce in the refrigerator.

Mornay sauce

Ingredients:

  • cashews – 150 g;
  • cauliflower – 1/4 cauliflower;
  • coconut milk – 100-150 ml;
  • asafetida spice – a pinch;
  • black salt – to taste;
  • smoked paprika – 1/4 tsp;
  • deactivated yeast – 2 tablespoons.

Method of preparation:

  1. Soak nuts overnight. In the morning, rinse well under running water.
  2. Steam the cauliflower.
  3. Put the cauliflower and nuts in a blender bowl and beat well.
  4. Add the coconut milk to the mixture until it is the consistency of thick sour cream.
  5. Add the rest of the ingredients and whisk well.
  6. Store the sauce in the refrigerator.

Cashew sauce with apple cider vinegar

Ingredients:

  • cashews – 200 g;
  • water – 180 g;
  • apple cider vinegar 9% – 40 g;
  • topinambour syrup – 20 g;
  • olive oil – 16 g
  • salt – 6 g;
  • curry – a pinch;
  • masala neo spicy – a pinch.

Method of preparation:

  1. Put all the ingredients in a bowl and whisk well with a blender.
  2. Refrigerate the sauce for a few hours to let it infuse well.
  3. Store the sauce in the refrigerator.

Useful mayonnaise

Ingredients:

  • natural yogurt – 7 tbsp;
  • mustard – 1 tsp;
  • olive oil – 3 tbsp;
  • garlic – 1 clove;
  • salt and spices – to taste.

Method of preparation:

  1. Combine olive oil, salt, pepper, garlic and mustard in a bowl.
  2. Stir well and add natural yogurt to the mixture.
  3. Stir all the ingredients to a homogeneous consistency.

Homemade mayonnaise

Ingredients:

  • olive oil – 200 ml;
  • raw egg yolk – 2 pcs;
  • sůl - špetka;
  • black pepper – on the tip of a knife;
  • 9% apple cider vinegar – 1 tbsp;
  • good quality mustard – 1 tsp.

Method of preparation:

  1. The necessary amount of ingredients to measure out in advance.
  2. In a deep container mix egg and mustard, beat with a mixer.
  3. Gently pour olive oil into the mixture, whisk well.
  4. Add mustard, pepper and vinegar to the whisked mixture.
  5. Whisk the sauce for another three minutes.

Classic Aioli Sauce

Ingredients:

  • olive oil – 250 ml;
  • raw egg yolk – 1 egg yolk;
  • garlic – 4 cloves;
  • sůl - špetka;
  • black pepper – on the tip of a knife;
  • lemon juice – 1 tbsp;
  • mixture of Provencal herbs – 2 tsp.

Preparation method:

  1. In a bowl, whisk the egg yolk with salt and pepper.
  2. Add vinegar and lightly rub the mixture with a fork.
  3. Add herbs and minced garlic.
  4. Begin to whisk the sauce, slowly pouring in the olive oil with one hand. The end result should be a soft, milky, thick mixture.
  5. Chill the sauce for 15-20 minutes in the refrigerator.

On New Year’s Eve, there will definitely be meat on the festive table – baked chicken or duck, spicy pork, shashlik. To meat dishes I recommend serving tomato sauce, not store ketchup with plenty of starch, sugar and preservatives.

Homemade sauce

Ingredients:

  • tomatoes in their own juice – 100 g;
  • olive oil – 2 tbsp;
  • parsley – a bundle.

Method of preparation:

  1. Fry tomatoes in their own juice in olive oil, adding salt and pepper to them.
  2. Add to the tomatoes finely chopped herbs and mix, cook for one or two minutes.
  3. Place the mixture in a blender bowl and chop well.
  4. Serve the sauce in a saucepan.

To New Year’s feast did not become a cause of digestive problems, I recommend not to overeat, choose healthy alternatives to classic recipes, replace mayonnaise with healthy sauces.
