March 8 is approaching – International Women’s Day, when many people want to please their other half: boat trips, trips to the movies, romantic dinner in a restaurant, themed decoration of the apartment and so on, not to mention gifts, ideas for which there are a lot. However, I suggest men not only to please their loved ones on this day, but also to surprise them – to cook dinner with their own hands.
Steamed fish with bulgur, dill sauce and salted pineapple
Ingredients for two servings
For fish:
- fillet of any, but not fatty, white fish – 400 g;
- fresh thyme – 1 sprig;
- salt and pepper to taste.
For bulgur:
- bulgur – 200 g;
- sůl podle chuti;
- butter – 50 g.
For dill sauce:
- fresh dill – 70 g;
- white dry wine – 30 ml;
- butter – 30 g;
- chicken broth – 100 ml;
- fresh spinach – 20 g;
- sůl podle chuti;
- chicken dry broth – to taste.
For salted pineapple:
- canned pineapple – 2 rings;
- salt – 1 tsp. without a slide.

Step 1.
Transfer the pineapple into a container, pour the juice from the can so that it slightly hides the fruit. Then add salt, cover with a lid and put in the refrigerator for 24 hours. After 24 hours, take out the pineapple and cut it into 0.5 cm cubes.
Step 2.
Pour chicken broth and white wine into a saucepan and bring to a boil. Add the stemless dill (just the florets) and spinach, then evaporate over low heat halfway through.
Season to taste with salt, you can add dry chicken broth for richness of flavor. It is important to add only dill florets, as the stalk will give bitterness.
Step 3.
Next, pour into a blender and beat to a homogeneous mass, gradually adding oil. Thus, you will get a perfect homogeneous consistency of sauce with a glossy shade.
This dish is also interesting because it combines fish, chicken and fruit. The main thing is not to deviate from the technology of cooking.
Step 4.
Boil bulgur, pre-salted to taste. Drain excess water and add butter.
Step 5.
Divide the fish fillets into two parts, salt, pepper, put a sprig of thyme on top and steam. A multicooker or a pot with a sieve is ideal for this. Approximate cooking time on already boiling water is 10-12 minutes (depending on the thickness of the fish).
Step 6.
Assemble the dish. In the center of the plate put bulgur in a mound, and carefully place fish skin side up on top. Put 1 tsp. of salted pineapple on the skin of the fish, 1/3 of the dish (for example, on the right side) pour dill sauce.
You can garnish with cherry tomatoes, a slice of lemon and a sprig of fresh thyme.
