While the season of juicy fruits and ripe berries is not over and there is a wide choice of natural gifts on the shelves, try fruit soup – an unusual dish rich in vitamins. But so that the treat does not turn into extra pounds, you need to know from what and how to prepare it correctly.

The main component of such a soup is fruit, and the main component of fruit is fructose, which is 2-3 times sweeter than glucose.
During evolution, the body has not developed a process to process fructose, so it goes entirely to the liver. The rest of the cells are unable to directly digest this substance. Therefore, out of 120 kcal of fructose, up to 40 kcal is stored as fat, which is a lot.
Fructose:
- promotes cholesterol and uric acid levels, the consequence of which can be gout;
- can lead to insulin resistance, which is linked to obesity, cardiovascular disease and cancer;
- causes glycation – the “sugarization” of protein molecules, which can provoke cataracts, wrinkles, and increase the risk of cancer.
It is preferable to eat vegetables, fruits and berries that:
- glucose and fructose content is low or their ratio is 1:1 – pineapple, blueberries, peaches;
- glucose content exceeds fructose – pumpkin, apricot, tangerine, orange, plum, cherry, strawberry, gooseberry, raspberry.
With caution should be used fruits and berries with a ratio of fructose to glucose 3 to 1 and 2 to 1: pears, apples, black currants, watermelon, melon, bananas, persimmons, grapes.
Pineapple okroshka
You will need:
medium baked potatoes – 1 pc;
radish – 4 pcs;
medium cucumber – 2 pcs;
boiled chicken breast – 100 g;
herbs (cilantro, parsley, dill, green onion);
pineapple kvass – 500 ml;
salt, pepper, horseradish, mustard to taste and desire.
Okroshka is a dish known to everyone, but not everyone knows that it can be prepared on pineapple kvass. To do this, dice potatoes, radishes, cucumber. Break the chicken breast into fibers and finely chop the greens. After mixing all the ingredients in a bowl, pour kvass, salt and pepper, add horseradish and mustard as desired and to taste. To finish, put yogurt or sour cream (you can replace it with a vegetable alternative).
