That case when the freshest product is not the best.

Many people are familiar with the situation when boiled eggs do not peel well. Why does this happen? And what to do not to remove half of the protein together with the shell?

Let’s share the chef’s tips and tricks.

Talks about ways to properly boil an egg so that it peels easily.

Why eggs don’t peel well

Freshness

Fresh eggs peel worse than those that have been stored in the refrigerator for a week or more. This is because the shell of the egg is leaky and over time, air gradually gets underneath it.

Cooking method

How easy it is to peel eggs also depends on the cooking method. If you put the egg in cold water, the white will spread and stick to the shell. But you can not put eggs from the refrigerator in boiling water – they can burst because of the sudden change of temperature. It is best to get eggs in advance, so that they warmed up to room temperature, and then put them in hot water.

How to properly boil an egg so that it is easy to peel

If you follow a few simple rules, there will be no problems in cleaning.

  • 15-20 minutes before cooking, take the egg out of the refrigerator.
  • Then lower it into boiling water and cook it over moderate heat.
  • When ready, drop it into cold water for 10-15 minutes. This shock cooling will cause the protein to shrink, and the shell will be easier to remove.

Eggs of two or three days freshness should not be cooked. Ideally, use eggs that have been stored in the refrigerator for about 5-7 days.

What else you can do to peel an egg faster

  • Gently hit the egg to crack the shell, and then lower it into ice water.
  • Put the finished product in a closed container of cold water and shake vigorously.
  • Before boiling, pierce the egg with an awl or needle on the blunter side. But do not make the puncture too deep, otherwise the egg may crack.
  • Steaming. Eggs are placed on a rack over boiling water for about 10-12 minutes. This way the albumen becomes tougher, allowing the shells to come off more easily.
  • Boil eggs in a multicooker or a special egg cooker.
