How much will it cost to make olivier in 2023? Calculating the price of your favorite salad
The cost of the New Year’s Eve dish in Russia has risen by 9% over the year.
Olivier is one of the most important decorations of the New Year’s table. Let’s see how much it will cost to make the classic version of the salad in 2023.
Ingredient prices
Prices for almost all ingredients of the salad in 2023 compared to last year have increased. The only exceptions were potatoes and mayonnaise.
As follows from the data of Rosstat, the strongest rise in price of eggs – since the beginning of the year by 36.8%, or 30.09 rubles in monetary terms. The cost of chicken has also jumped – by 30.4%. Meanwhile, prices for a number of products have fallen. Thus, since the beginning of the year, potatoes have become cheaper by 14.5%, while mayonnaise – by 1.2%.
This year, the ingredients for olivier will cost an average of 334 rubles. At the end of last year, the cost of preparing the salad was 9% lower – 306 rubles.

- potatoes (500 g) decreased in price by 10%, the average cost per 1 kg is 27.61 rubles;
- carrots (200 g) became more expensive by 25.4%, 1 kg will cost an average of 41.25 rubles;
- chicken eggs (4 pcs.) for the year rose in price by 40.8%, now a dozen costs 111.87 rubles;
- fresh cucumbers (200 g) fell in price by 9.8%, the average cost for 1 kg is 147.68 rubles (depending on the variety);
- onions (100 g) decreased in price by 14.5%, the price of 1 kg in stores is equal to 33.46 rubles;
- green peas (100 g) increased in price by 16.7%, now it costs about 105 rubles for a 400 g can;
- boiled sausage (300 g) rose in price by 6.4%, up to 509.52 rubles per 1 kg;
- mayonnaise (200 g) has become cheaper, but not significantly: the average price for the year has decreased by 1.2% to Br276.87 per 1 kg.
Note that the average cost of green peas is not specified in the statistics of Rosstat, we took the average prices in chain stores based on personal experience.
The average consumer prices for products at the end of November 2023, published on the official website of Rosstat, are taken as a basis. Specialists monitor price tags in stores every week and publish reports.
Cost in different regions
In Moscow, the ingredients for olivier are more expensive and cost about 400 rubles (19.7% more than the national average). This is due to the high cost of cooked sausage, a kilogram of which costs an average of 725.07 rubles in the capital.
Prices are different in the regions of Russia. In the Moscow region, the average cost of salad components will cost about 365 rubles, in St. Petersburg – 350 rubles, in Krasnodar Krai – 340 rubles, in Tatarstan – 300 rubles, in the Volgograd region – 285 rubles, in the Chukotka Autonomous District – 725 rubles.
