From March 8 to 14, Russia celebrates Maslenitsa. On this holiday, it is customary to cook pancakes and eat them with various tasty fillings. But what to do for those who do not want to deny themselves traditional treats, but are afraid of gaining extra pounds? There is a way out – to bake PP-pancakes. What they should consist of, what to serve them with and how to cook, we understand together with nutriciologist, expert on healthy eating Anna Berseneva.

What should be in the composition of PP-pancakes?

Usually pancakes are made of eggs, sugar, milk, butter and wheat flour. These are the main ingredients, but, of course, there are many variants with different additives. Unfortunately, a person who strictly follows the diet and adheres to a healthy diet, does not use almost any of the above products. In this case, they can be replaced.

Wheat flour. Any whole-grain flour will do: corn, buckwheat, rice (from brown or red unprocessed rice), oat flour. Choose flours accordingly to how your body tolerates gluten.

Sunflower oil. Replace with oils that can withstand high heat treatment: ghee (clarified butter), coconut oil, or avocado oil.

Cow’s milk. It can well be replaced with vegetable milk: coconut milk, oat milk, soy milk, almond milk, and so on.

Sugar. Instead of it we use either topinambour syrup, coconut sugar or sweeteners.

What to serve them with?

Even if you stick to the right diet, you can find quite a few toppings for pancakes. It can be even the most ordinary sour cream, if the body tolerates dairy products well. It is quite a useful product: it contains fats useful for the hormonal system, and there is little lactose, unlike milk. If you are interested in a plant-based option, you can replace sour cream with coconut yogurt.

Honey or coconut condensed milk will also work. The latter can be easily prepared by yourself: cook coconut cream and coconut sugar on low heat for 15 minutes after boiling – and a healthy alternative to the classic “boiled” is ready.

In addition, pancakes go well with homemade jam and berries. You can use frozen: whip in a blender with sweetener or vanilla to a puree.

PP pancakes recipe

Sa pead:

  • oat flour – 250 g (that’s about 2 cups);
  • vegetable milk – about 0.5 liters;
  • munad - 2 tk;
  • coconut sugar (sweetener) – 1-3 tsp;
  • sool - 1 näputäis;
  • baking soda – 0.3 tsp (optional);
  • avocado oil – 1.5 tbsp.

Stir and lightly beat eggs with sugar and salt. Pour in the milk, mix thoroughly. Add oat flour and, if desired, baking soda. Leave the dough to infuse, about 10-15 minutes. Then add vegetable oil and get started! Fry the pancakes over medium heat on both sides until cooked through.
