How do you cook eggs properly?

In order to get rid of bacteria, it is important to choose the right method of heat treatment.

Omelette with beans and bacon, poached on bruschetta with guacomole or perfect in its simplicity, eggs can be cooked in a dozen ways and to any taste. But even if you don’t have to get fancy, it seems like everyone can fry eggs. However, we often forget about the basic, but so important rules – the rules of safety. We tell you what mistakes are most often made when cooking eggs.

Expiration date

Forget about the expiration date, which is indicated on the package, you can not in any case. Expired eggs should be immediately thrown away. Without refrigeration at temperatures from 0 degrees to +20 degrees, eggs can be stored for no more than 25 days, while at temperatures from -2 degrees to 0 degrees the shelf life increases to 90 days.

Watch out for salmonella

Salmonellosis can often be associated with the consumption of eggs. This acute intestinal infection is most dangerous for children under five years of age and the elderly over 65 years of age. The microorganisms that may be in the egg are killed at temperatures of 75 degrees or more. However, the protein begins to curdle already at 45 degrees, which means that scrambled eggs do not always have time to warm up to the right temperature. Therefore, it is better to make an omelet from fresh, freshly beaten eggs.

Do not wash eggs in advance

Washing all eggs immediately after purchase is not worth it. This breaks the natural protective film of the product. If an egg is too dirty, you can gently wipe it off. If you do decide to wash it, it’s best to cook it immediately – for example, boil it – and leave it ready for later.

Keep it clean

During cooking, you should not forget about the thorough treatment of the work surface. You should also wash your hands more often. Treat eggs the same way you would treat raw fish or meat.

By keeping these simple rules in mind, you will not only enjoy a delicious breakfast, dessert or nutritious snack, but you will also be sure that you are not harming your own health.
