  • 2 large rack of lamb, cut into portions of 3 bones each

This is interesting: in regular supermarkets and markets you will get loin (also a good product). The rack differs from the loin in that each piece is sort of set on a thin “bare” bone, which you can wrap with a foil curler if you wish.

  • Salt
  • Pepper
  • Olive oil

For the crust:

  • 4 slices of stale bread
  • 7 tablespoons grated parmesan (about 1/2 cup)
  • Sprig of parsley
  • Sprig of thyme
  • Coriander sprig
  • Rosemary sprig
  • 2 tablespoons English mustard (Dijon mustard), a little olive oil

  • 1,5 -2 kg salt

Raspberry soufflé

You will need:

  • 400 g raspberries
  • 100 g powdered sugar
  • 1 vanilla pod

For the creme pâtissière:

  • 2 large egg yolks
  • 150 ml milk
  • 100 ml cream
  • 15 g flour
  • 10 g cornflour
  • 3 eggs
  • 40 g powdered sugar
  • 3-4 Amaretto biscuits
  • 1 tablespoon of raspberry liqueur
  • 80g fresh raspberries

For baking:

  • 40g butter
  • 4-6 tablespoons of grated dark chocolate
