Preparation:

Dough:

  1. In a bowl, mix flour, sugar and salt.
  2. Add the cold butter.
  3. Add the egg and knead the dough until smooth.
  4. Form the dough into a ball, wrap it in cling film and leave it in the refrigerator for a few hours.

Baking the tartlets:

  1. Preheat the oven to 180°C.
  2. Roll out the dough on a floured surface until it is about 3 mm thick.
  3. Cut out circles from the dough and place them in the tartlet molds.
  4. Bake in the preheated oven for 15-20 minutes until golden.
  5. Allow the tartlets to cool completely.

Cream:

  1. In a bowl, whisk the cream to soft peaks.
  2. In a separate bowl, mix together the mascarpone, powdered sugar, and vanilla.
  3. Gently incorporate the whipped cream into the mascarpone, mixing until smooth.

Assembling the tartlets:

  1. Fill the cooled tartlets with the mascarpone cream.
  2. Top with fresh berries.
  3. Decorate with mint as desired.
