5 unexpected recipes from cottage cheese that can surprise you

If you love cottage cheese, you’ve probably made cheesecakes or casseroles with it more than once. For many people, cottage cheese is the only thing that can be used to make a dessert. However, other dishes are also made from this product: it is smeared on bread instead of cheese, added to soup or potatoes. There are recipes for every taste. We have collected five atypical ideas that will help you diversify your diet.

Bulgarian potatoes with cottage cheese

  • potatoes – 4-6 pcs;
  • cottage cheese – 250-400 g;
  • butter – 100 g;
  • chicken eggs – 2 pcs;
  • yogurt (or sour cream) – 250 ml;
  • pepper, salt, herbs – to taste.

Grind the cottage cheese (better homemade, not dry and not too sour) with a fork with softened butter to a paste. You can do it with a blender. Salt and pepper the resulting mixture, add chopped herbs and your favorite seasonings. Once again mix thoroughly.

Wash and clean the potatoes, thinly slice the tubers into circles, then sprinkle them with salt and mix. Grease a mold (for example, a deep baking tray) with any oil, lay one third of the potatoes on the bottom. Place one third of the cottage cheese and butter mixture on top of the potatoes, smooth it out. Alternate layers until the mold is filled. It is worth leaving 2-3 cm to the top edge of the mold, as the contents will rise during baking. The last layer should be cottage cheese. Cover the mold tightly with foil and put to bake in the oven for 1 hour and 10 minutes at 190 degrees.

When the time is up, remove the potatoes from the oven, remove the foil. Lightly whisk together yogurt (or sour cream), chicken eggs, salt. Pour the resulting mixture over the top of the casserole, put back in the oven – for 15 minutes, until the top is browned.

The dish should be cooled, it can be served with vegetables and greens.

Sandwiches with beet curd cream and herring

  • beet (boiled or baked) – 1 pc;
  • soft cottage cheese – 100 g;
  • horseradish or mustard – 1 tsp;
  • lemon juice – 1 tsp;
  • ground coriander seeds – 1 tsp;
  • salt to taste;
  • green onions;
  • herring;
  • borodino bread.

Chop beets, add lemon juice, salt, horseradish, coriander and whip in a blender to a puree. If you want a more delicate consistency, the resulting puree can be rubbed through a sieve. Then add soft cottage cheese and mix thoroughly. Cut onions into feathers.

On slices of bread, spread the cottage cheese-beet mixture, lay the onions on top, and then – herring. The appetizer is ready!

Soup with cottage cheese

Jums reikės:

  • potatoes – 3 pcs;
  • onion – 1 pc;
  • carrots – 1 pc;
  • salt, pepper to taste;
  • herbs to taste;

for dumplings:

  • cottage cheese – 100 g;
  • sour cream – 3 tsp;
  • butter – 15 g;
  • flour – 2 tbsp;
  • egg – 1 pc;
  • salt – 1/3 tsp;
  • parsley to taste.

Onion finely chop. Grate carrots on a fine grater. Cut potatoes into small cubes. In the boiling broth send carrots and cook for five minutes. Then add onions and potatoes, salt to taste and cook until the vegetables are ready.

At this time you need to prepare cottage cheese. Put it in a bowl, add sour cream, soft butter, egg yolk, salt and mix well. Then pour in a little flour and, if desired, parsley. Mix again.

Beat the egg white to stable peaks. Put it to the cottage cheese and mix. The dough should turn out not too thick and not too liquid, otherwise the dumplings will not hold their shape well. You may need a little more flour – it all depends on the moisture content of the cottage cheese.

Make dumplings out of the curd dough, for example, using a teaspoon. Lower the resulting balls to the cooked vegetables, add chopped chicken meat and cook for another three minutes. Then sprinkle with dill, pepper, bring to a boil and remove from heat. Done!

Fitness buns

Jums reikės:

  • chicken breasts – 2 pcs;
  • egg – 1 pc;
  • ground oatmeal – 40-50 g;
  • large onion – 1 pc;
  • salt;

for stuffing:

  • cottage cheese – 1 pack;
  • favorite herbs and garlic;
  • hard cheese;
  • sour cream – 1 tbsp;
  • salt.

All ingredients finely chop, mix and spread into pre-formed breast molds. Then send to bake for 25-30 minutes.

Meat cutlets with cottage cheese

Jums reikės:

  • minced beef and pork – 500 g;
  • fat cottage cheese – 160 g;
  • carrot – 1 pcs;
  • onion – 1 pc;
  • garlic clove – 2 pcs;
  • egg – 1 pc;
  • butter – 1 tbsp;
  • salt, pepper.

Peel onions, carrots and garlic, chop with a blender. Add to the minced meat, salt and pepper. Grainy cottage cheese can be rubbed through a sieve or crushed with a blender. If the cottage cheese is low-fat or dry, you may need a second egg. Add the cottage cheese and egg to the meat and mix well. Form cutlets and place them in a greased mold.

Bake for 30-35 minutes at 180 degrees, then grease with butter and increase the temperature to 220 degrees to get a ruddy crust.
