Useful baked goods: 5 recipes for festive PP kulichs

This Sunday will be Easter, and some people have already started preparing for it in advance. In anticipation of the holiday, many homes are now dyeing hard-boiled eggs and decorating cakes with sprinkles. However, those who adhere to strict dietary principles, can not afford to enjoy ordinary sweet pastries without remorse. But there is a way out even from such a situation. We have prepared five useful recipes for the traditional Easter dish, which will definitely not harm the figure. There is a variant for vegans too!

Diet kulich made of rye flour and cottage cheese

Coarse rye flour is an essential component of healthy baked goods. It is used even in the diet for diabetics, since rye is a slow carbohydrate and is broken down gradually, without causing blood glucose spikes.

Ingredients:

  • coarse rye flour – 150 g;
  • eggs – 2 pcs;
  • cottage cheese – 200 g;
  • honey – 1 tablespoon;
  • baking soda – 1 teaspoon;
  • lemon juice – 1 teaspoon;
  • vanilla extract – 1/2 teaspoon;
  • dried fruits and nuts to taste;
  • unflavored yogurt – 100 ml;
  • gelatin – 1 teaspoon.

Preparation method

Put in a bowl flour, eggs, cottage cheese, honey, baking soda, lemon juice and vanilla extract. Mix all the ingredients and add the dried fruit. Knead the dough and put it in a pre-greased oiled mold. Send it to an oven heated to 160 degrees for an hour.

At this time, separately mix yogurt with gelatin, if desired, you can add a little honey. Cooled kulich pour the resulting cream and decorate with nuts and dried fruits to taste.

Nut and citrus kulich with cranberries

In the dough for kulich it is customary to put raisins, but it can well be replaced by cranberries paired with your favorite nuts. So new unusual notes will be added to the traditional flavor of baked goods.

Ingredients:

  • whole wheat flour – 200 g;
  • corn flour – 50 g;
  • leavening agent – 1 teaspoon;
  • baking soda -1/2 teaspoon;
  • cane sugar – 50 g;
  • salt and vanilla sugar to taste;
  • cinnamon – 1 teaspoon;
  • almonds – 70 g;
  • dried cranberries – 70 g;
  • coconut oil – 15 ml;
  • orange – 1 pc;
  • water – 50-150 ml.

Method of preparation

Sift the flour and add to it in a bowl cane and vanilla sugar, salt, baking powder, baking soda, cinnamon, chopped almonds and cranberries. Zest the orange and add it to the dry ingredients along with the orange juice and oil. Stir and, if necessary, add a little water to bring the dough to the right consistency.

Put the dough into small disposable molds and put in a preheated oven at 180 degrees for about half an hour. You can check the readiness with a toothpick. When the kulichi cool down, you can pour glaze over them.

Vegan kulich with banana

Vegans approach the choice of dishes with special seriousness. They make sure that there are no animal products in their food. And it is not only about meat, but also about eggs and milk. Fortunately, the Easter kulich can be baked without them.

Ingredients:

  • banana – 1 pc;
  • flour – 250 g;
  • oat milk – 200 ml;
  • sugar – 100 g;
  • salt – 1/2 teaspoon;
  • vegetable oil – 30 ml;
  • raisins – 50 g;
  • leavening agent – 10 g;
  • optional lemon or orange zest – 20 g;
  • powdered sugar – 100 g;
  • mineral water – 250 ml;
  • lemon juice – 5 ml;
  • decoration. ⠀

Method of preparation

Mash the banana with a mortar or fork. Add to it citrus zest, milk, butter, sugar, salt, leavening agent and mix all ingredients. Sift the flour through a sieve and gradually mix into the main mixture. Lastly, evenly add the raisins. Bake the dough for about an hour at 180 degrees in a mold with oiled paper.

To prepare the glaze, mix powdered sugar, mineral water and lemon juice in a small saucepan. Cook over low heat until thickened. When the kulich cools down, decorate it with the resulting mass and decorations.
