How to prepare a healthy kulich for Easter?

Traditional Easter treats can be delicious and healthy without the extra calories and sugar.

In order not to depart from the canons of the feast, but at the same time to preserve the benefits of the festive diet, heed the advice:

  • Choose a medium-fat cottage cheese for dishes – up to 5%;
  • replace sugar with natural sweeteners or berries;
  • choose leavening agent (baking soda) recipes instead of yeast baked goods;
  • replace wheat flour with gluten-free flours such as almond flour, rice flour, coconut flour or amaranth flour; wheat bran and rolled oats are also suitable;
  • prepare the glaze for kulich by yourself, not using ready-made mixes.

Kulich is the main symbol of the Orthodox holiday of Easter. Easter feast without kulich is impossible to imagine, but it is possible to bake a tasty and flavorful kulich not according to the grandmother’s recipe.

The classic version has a lot of sugar, yeast and wheat flour – this is a huge load on the digestive system, a blow to the pancreas, an excess of fast carbohydrates and extra calories.

I suggest baking an alternative kulich with maximum benefits and flavor.

Mix yogurt, eggs, oil and erythritol, add a pinch of salt and mix thoroughly. Sift almond flour and baking powder into the mixture and mix. Add strawberries (berries, dried fruit) to the dough. Pour it into the molds for kulichi and send it to an oven heated to 180 degrees Celsius for 45-50 minutes. Cooled kulichi decorate with glaze as desired.

Universal glaze for kulichi

You will need:

  • agar-agar – 0,5 tbsp. ml;
  • water – 30 ml;
  • sugar substitute – 70 g;
  • vanillin.
