Avocado has become a real PP hit in recent years. It is hard to imagine the menu of any healthy food restaurant without it. And this fruit is used in all kinds of dishes: from soups to desserts. If you are not among the avocado lovers, it means that you have not yet found your ideal combination. Here are six interesting recipes that are definitely worth trying!

Eggs with avocado mousse

Breakfast is the first and main meal. This dish can quite replace the usual scrambled eggs or porridge.

You will need:

  • boiled eggs – 2-3 pcs;
  • avocado – 1 pc.
  • salt;
  • pepper;
  • lemon juice;

optional:

  • Salmon;
  • red caviar;
  • arugula.

Boil the eggs hard-boiled and remove the yolks. Then mix in a blender together with avocado, pepper and salt. Fill the remaining whites with the resulting filling. You can pour olive oil on top or sprinkle with almond crumbs.

Salmon, caviar and arugula can be replaced with any other products that you prefer. Don’t be afraid to experiment and try different combinations.

Avocado Smoothie

An alternative option for breakfast or a snack is a smoothie. It’s great for those who don’t have a minute to spare in the morning.

You will need:

  • avocado – half;
  • frozen banana – 1 pc;
  • spinach – 50 g;
  • almond milk – 200 ml;
  • coconut water – 100 ml;
  • fresh blueberries – a small handful.

Pre-freeze the banana for three hours, then peel off the peel. Peel the avocado and mix all the ingredients with a blender. The finished dish can be decorated with seeds or fresh berries.

Salad with haloumi, baked tomatoes and avocado

You will need:

For the salad:

  • mash groats or lentils – 100 g;
  • Haloumi cheese – 200 g;
  • zucchini – 1 pc;
  • red onion – 1/2 pc;
  • avocado – 1/2 pcs;
  • cherries – 200 g;
  • salad;

for dressing:

  • avocado – 1/2 pc;
  • juice of 1/2 orange;
  • olive oil – 50 ml;
  • salt;
  • pepper.

For the dressing, mix and beat all the ingredients with a blender until smooth. Boil the mash, send the cherries to a preheated oven for 10 minutes at 180 degrees Celsius. Slice zucchini thinly with a vegetable peeler. Dice the avocado and cut the red onion into half rings. Cut the haloumi into 1 cm thick slices and fry in a pan without oil over medium heat for 1-2 minutes on each side.

Assemble the salad: place the onion, zucchini and avocado on the salad leaves. Next, dressing and cooled mash, roasted cherry tomatoes and hot halloumi.

Broccoli and avocado cream soup

You will need:

  • white onion – 1 pc;
  • garlic – 4 cloves;
  • broccoli florets – 2 cups;
  • vegetable milk – 2/3 cup;
  • vegetable broth – 1 cup;
  • spinach – one cup;
  • avocado – 1 pc;
  • parmesan – 2 tbsp;
  • salt;
  • pepper.

Fry white onion and garlic, then broccoli florets (cook until crispy and soft inside). Add the vegetable milk, vegetable broth, cover and leave for 5-10 minutes.

Send everything from the skillet to a blender and add spinach, avocado, parmesan, salt and freshly ground pepper to taste. You can garnish the finished soup with croutons.

Guacamole

This dish is a true classic of Mexican cuisine and, perhaps, one of the most popular “incarnations” of avocado.

You will need:

  • avocado – 2 pcs;
  • cilantro – 1/4 cup;
  • tomato – 1 pc;
  • red onion – 1/4 cup;
  • jalapeño pepper – 2 tbsp;
  • lime juice – 2-3 tbsp;
  • salt – 2 tsp.

Mash avocado thoroughly with a fork, add remaining ingredients and stir. Taste and add seasonings or lime to taste.

Avocado appetizer

You will need:

  • avocado – 3 tbsp;
  • grated cheese – 3 tbsp;
  • mayonnaise – 1 tbsp;
  • sour cream – 1 tbsp;
  • garlic clove – 1 pc;
  • sesame seeds – 2 tbsp;
  • cherry tomatoes – 2 pcs;
  • lemon juice – 2 tsp;
  • dill.

Using a spoon, peel the avocado from the skin. Mix grated cheese, mayonnaise, sour cream, squeezed garlic. Smear the avocado halves with lemon juice. Then mix two kinds of sesame seeds and roll the avocado halves in the resulting breading. Put the filling in the middle, garnish with tomatoes and dill.
