Many people are diligently preparing for the New Year and diligently lose weight. After all, during the holidays the tables are bursting with food, and not to gain a couple of extra pounds is very, very difficult. Among the festive dishes rarely find something healthy. Salads with mayonnaise, fried potatoes, meat dishes – like everything tasty, it is quite harmful. However, it is quite possible to find healthier alternatives. You will not have to give up even olivier, without which it is difficult to imagine the Russian New Year’s table. We have collected five healthy recipes for festive appetizers and desserts for you.
Olivier

- raw or boiled carrots – 100 g;
- fresh cucumber – 120 g;
- low-salted or salted cucumber – 80 g;
- smoked tofu – 100 g;
- avocado (optional) -100 g;
- green peas – 90 g;
- dill, parsley, green onions – to taste;
- vegetable yogurt;
- cashew mayonnaise or pesto sauce.
The cooking process is extremely simple. All the ingredients are chopped and mixed, as for a classic olivier. But instead of mayonnaise, use sauce for dressing. For it you will need vegetable yogurt, cashew mayonnaise or pesto.
Salad with crab sticks

- boiled squid – 150 g;
- crab sticks – 200 g;
- egg – 2 pcs;
- green onion – 30 g;
- natural yogurt (for example, Greek) 2% – 100 g;
- soy sauce – 1 tbsp.
Another frequent guest on the New Year’s table. First, chop crab sticks, squid (rings or pieces) and green onions. Boil eggs, chop them with a knife or egg slicer and add to the rest of the ingredients.
For the dressing, mix together the soy sauce and yogurt. Season to taste with salt and pepper if necessary.
Chicken appetizer

- carrots – 350 g;
- eggs – 2 pcs;
- 45% cheese – 90 g;
- chicken thigh fillet – 140 g;
- garlic – 2 cloves;
- sour cream 10% – 80 ml;
- salt, pepper – to taste;
- cloves for decoration.
Carrots, eggs and meat should be boiled. Then grate carrots, eggs, cheese and garlic on a fine grater. Combine all ingredients except carrots and mix thoroughly.
For each “tangerine” you will need 1 tsp. of the resulting mixture and 1 tsp. with a slide of carrots. First, carefully lay out the carrots on the food wrap in a thin layer. Put the stuffing on top. Then connect the ends of the foil and make a ball.
The finished “tangerine” can be decorated with cloves. Such an unusual serving will surely surprise your guests.

Banana brownie
Você precisará de:
- banana – 3 pcs;
- eggs – 4 pcs;
- rice flour – 100 g;
- kerob – 30 g;
- 2.6% milk – 180 ml;
- leavening agent – 1 tsp;
- 80% chocolate – 50 g;
- coconut oil – 5 ml;
- pomegranate seeds and mint for decoration.
Mix two bananas, eggs, sifted flour, aerobic (you can use cocoa), 150 ml of milk and leavening agent in a blender. Slice the remaining banana and place in a mold, pre-greasing it with oil. Instead of one large one, you can use muffin molds. Bake in the oven for 40 minutes at 180 degrees.
While the brownies are baking, make the chocolate sauce. Melt the chocolate with the remaining milk in the microwave or on a water bath. Drizzle the finished brownie with chocolate and garnish with pomegranate and mint.
Charlotka

- brown rice flour – 2 cups;
- kefir or drinkable vegetable yogurt – 1 cup;
- topinambour syrup – 1 cup;
- ghee/ butter (can be replaced with coconut oil) – 100 g;
- medium-sized apples – 5 pcs;
- raisins – 50 g;
- gluten-free leavening agent or baking soda – 1 tsp;
- vanilla – 1 tsp;
- ground cinnamon – 1 tsp;
- oil for greasing the mold (coconut oil or ghee).
First, mix all the dry ingredients together. Wash raisins, pour boiling water for 15 minutes, then drain. Peel the apples from the seeds and cut into slices. Cover the bottom of the mold with parchment paper and grease with oil, lay out the apples, spread the raisins on top and then the dough. Bake for about 45 minutes at 180 degrees.
Ready charlotte should be allowed to cool in the form, then take out and transfer to a dish. You can sprinkle cinnamon on top and decorate with mint leaves.
