What’s delicious and healthy to cook for Christmas? 5 step-by-step recipes from the chef

Traditionally, the table at Christmas should be rich in fish and meat dishes (preferably whole goose, duck, turkey, chicken) and pie as a symbol of unity. What interesting things can be prepared? We offer several variants of useful dishes.

Uzvar

Ingredientes:

  • dried apples;
  • rose hips;
  • cranberries;
  • apricots.

Preparação: wash well dried fruit, pour water and bring to a boil, let stand, then strain the drink.

You can simply boil a berry morsels of cranberries, cranberries, sea buckthorn. If desired, you can sweeten to taste.

Canapés with goat cheese, cucumber and red fish

Ingredientes:

  • goat cheese – 200 g;
  • red fish (fillet) – 150 g;
  • cucumbers – 1-2 pcs;
  • greenery for decoration.

Preparação: cut the cheese, fish into cubes, cucumbers into pucks. Assemble everything in a pyramid, fix with a sprig of rosemary or a skewer, decorate with greens.

Chicken fillet salad

Ingredientes:

  • chicken fillet – 400 g;
  • orange – 1 pc;
  • green apple – 1 pc;
  • a bunch of green salad.

For the sauce:

  • olive oil – 3 tbsp;
  • salt – 1 tsp;
  • honey – 1 tbsp;
  • ground black pepper.

Preparação: boil chicken fillets in salted water until tender, cool. Cut into cubes. Peel the orange from the peel and membranes and slice.

Peel the apple from the peel and seeds, cut into cubes, shred or chop the salad. Prepare the sauce – mix olive oil with honey and salt, dissolve well. Fold everything together and dress with the sauce.

Turkey baked whole

Ingredientes:

  • turkey – 1 turkey carcass;
  • lemon – 2 pcs;
  • onions – 2 pcs;
  • parsley – 5 sprigs (part for gravy and part for backing);
  • sprig of rosemary – 3-4 pcs;
  • ghee oil – 150 g;
  • salt, pepper to taste;
  • olive oil – 2 tbsp;
  • garlic – 2-3 cloves;
  • apple – 2 pcs;
  • orange – 1 pc.

Preparação: wash and dry the turkey well, make the turkey rub mixture separately in a bowl. Chop parsley, rosemary and add ghee oil, mix.

Finish with crushed garlic, salt, pepper. Grate the zest of one lemon and squeeze its juice into the mixture, add olive oil, mix everything well.

Remove all the insides from the turkey and carefully separate the skin from the carcass (do not remove, but lift). Spread some of the spice mixture under the skin, and rub some of the mixture all over the carcass on top of the skin.

Coarsely chop the apples, lemon, and peeled onion. Leave a couple slices of onion and apples for a pillow. Stuff the carcass with apples and onions.

Place apple slices, onion slices and parsley and rosemary sprigs on the bottom of the baking dish. Place the turkey on top. Tie the legs together with string and secure the opening with skewers.

Bake the bird at 180 degrees for at least an hour and a half. After baking, pour the turkey with the released juice from the tray, cover with foil and leave in the oven for another two hours. Serve the turkey with vegetables.

Apple pie

For the pastry:

  • almond flour – 300 g;
  • honey (liquid) – 2 tbsp;
  • ghee oil – 50 g;
  • almond petals for decoration.

For the filling:

  • green apples – 6 medium;
  • walnuts – 150 g;
  • raisins – 50 g;
  • liquid honey – 1 tbsp;
  • cinnamon to taste.

Preparação: grate peeled apples, squeeze out excess juice, chop walnuts, mix with apples, raisins and honey. Add cinnamon and mix, combine the ingredients for the dough and grind with your hands into crumbs.

Cover a mold (diameter 24 cm) with parchment. Layer the dough and apple filling. The dough should be the top layer. Tamp the top layer well and bake the cake for about 45 minutes, at 180 degrees.

Brown the almond petals lightly in a dry pan. When the pie is ready, decorate it with almond petals.
