Tsar’s Easter is a kind of combination of cottage cheese and sour cream. To prepare the dessert, you will need the following ingredients:
- cottage cheese (preferably fatty) – 1 kg;
- butter – 200 g;
- sugar – 1-1,5 cups (to taste);
- chicken eggs – 4-5 pieces;
- sour cream – 200 g;
- vanilla sugar – 1 sachet;
- raisins (seedless) – 100 g;
- candied fruit (optional) – 50 g;
- almonds (or other nuts, if desired) – 50 g;
- salt – a pinch.
The cottage cheese should be maximally rid of moisture. To do this, it should be rubbed through a sieve or use gauze, squeezing out all the excess liquid.
Step-by-step preparation
1. In a deep bowl, mix cottage cheese, soft butter, sugar, vanilla sugar and salt. Mix everything thoroughly until smooth.
2. Beat the eggs with sugar until puffy, then add the sour cream and continue beating until smooth.
3. Mix the egg and sour cream mixture with the cottage cheese mixture. Mix everything well until smooth.
4. Add the pre-washed and dried raisins, finely chopped candied fruit and nuts to the cottage cheese mixture. Mix the mixture gently.
5. Prepare a special mold for Easter or use an ordinary colander lined with several layers of gauze. Transfer the curd mixture into it, tamp it well and close the ends of the gauze over the top.
6. Put the mold with Easter under the press (you can use a jar of water) and leave in the refrigerator for 12-24 hours to drain excess liquid and insist.
7. Carefully remove the Easter from the mold by removing the gauze. Decorate as desired with fresh berries, candied fruits, nuts or chocolate shavings.

The main ingredient of the royal Easter is cottage cheese. It is an excellent source of high-quality protein, necessary for the repair and growth of muscle tissue, as well as for the normal functioning of the immune system.

Due to the large amount of butter and sugar, royal Easter can be very caloric. With excessive consumption, such a product leads to weight gain.
