New Year is one of the most anticipated holidays all over the world. A beautiful Christmas tree, cozy gatherings with friends and relatives, Santa Claus and, of course, long-awaited presents. Traditionally, people organize family feasts with a lot of delicious, but incredibly caloric dishes. Is it possible to avoid extra pounds and not to refuse treats? Today we will tell you what salads to prepare for New Year’s Eve, so that it was both tasty and useful. Write it down and save it so that you do not lose it!

Salad “Pretty Woman” without mayonnaise.

All the ingredients in the salad perfectly combine and create a harmony of flavor.

List of ingredients:
● Smoked chicken meat – 300 g
Peking cabbage – 300 g
● Pear – 1 pc.
Walnuts – 50 g
● Vegetable oil – 4-5 tbsp.
French mustard – 2 tsp.
Ground black pepper – 1 tsp.
Salt – as desired

Spôsob prípravy:
● Chop peking cabbage, pear and smoked chicken.
Prepare the dressing: mix mustard, vegetable oil and pepper.
Mix all salad ingredients with the dressing.

Quinoa with baked vegetables and cheese

In hot form, this dish will be a wonderful side dish, and in cold form – a delicious salad. Try two variants and decide which one you like better.

Ingredient list:
● 7 tbsp. quinoa
1.5 tbsp. water
2 bell peppers
● 2 zucchini (zucchini)
● Salt, Provencal herbs
Olivový olej
Brynza cheese

Spôsob varenia:
Rinse quinoa thoroughly and pour into boiling salted water. Cover with a lid, reduce the heat to low and leave to cook until the water is absorbed. Cut zucchini and bell pepper into large pieces, salt, add olive oil and herbs, mix and place on a baking tray lined with baking paper. Bake in a preheated oven at 190 degrees for 30 minutes. Mix quinoa and vegetables, add cheese. If the dish is consumed as a salad, you can dress it with balsamic vinegar m olive oil.

Salad with arugula and shrimps

Very light, fresh, tasty and low-calorie. A treasure trove of vitamins and minerals.

List of ingredients:
● Arugula – 30 gr.
● Tomatoes 2 pcs.
● Red basil – 30 g.
● Shrimps – 100 g.
● Cucumbers – 150 g.
Olive oil – 1 tbsp.
Lemons – 1 slice
Garlic – 1-2 cloves
Pepper, salt – to taste.

Spôsob varenia:
First, we will crush the garlic clove and fry it in a heated pan with oil. As soon as the garlic is browned – take it out. Next, put frozen (already peeled) shrimp into the garlic oil. Wait for the excess liquid to evaporate. It will take about 5 minutes. Salt and pepper to taste. I used rosemary as an additional seasoning. Put the cooked shrimp on a separate dish. Now take the greens (arugula and basil) and put them in a deep salad bowl. Next, cut tomatoes into small slices and put them in a salad bowl. I decided to cut the cucumbers into slices. If desired, you can peel them from the skin. Put the fried shrimp. Add olive oil, lemon juice, salt. And mix thoroughly.

Ingredient list:
● Chicken breast 250 gr
● Potatoes 150 gr
Yogurt 100 gr
● Carrots 50 gr
Eggs 3 pcs
Pickles 2 pcs.
Fresh cucumbers 1 pc
Peas 50 gr
Onion 50 gr
Mustard 5 gr
Salt, herbs to taste.

Let’s put the chicken to boil. And when boiled, cool it down – in this form it will be much easier to cut it. We will cook potatoes and carrots not in water, but on steam – in a steamer or in a multicooker. So the vegetables will retain much more flavor and useful substances. And you can speed up the process if you pre-clean the vegetables and cut them into cubes raw. Boil eggs hard-boiled. You can do it the usual way – in water. Or you can, as well as vegetables – steamed. Now it’s time for cucumbers. You can use fresh ones alone. Or you can take fresh and pickled cucumbers in a 50/50 ratio. Or 2/3 pickled, and the rest – fresh. Let’s not forget the onions! Chop it in the same way. Cut all the ingredients into small cubes: potatoes, carrots, cucumbers, chicken, eggs. It remains to make the dressing. You need to take ordinary unsweetened yogurt and mix it with mustard. Now combine all the products, add the dressing, salt. Carefully mix everything and put the salad bowl in the refrigerator for about 20 minutes.

Herring under a fur coat

One of the most popular “New Year” salads is herring under a fur coat. A great recipe with a sauce based on sour cream and mustard instead of classic mayonnaise. The other products in this version are the same, the vegetables are boiled. Salad is served on a large plate.

List of ingredients:
● Salted herring – 1-2 pieces (depends on the size of the plate and fish)
● Turnip onions – 1 pc.
Potatoes – 2-3
Medium carrots – 1 pc.
● Chicken eggs – 2-3 pcs.
Red beets – 1-2 pcs.
For the sauce:
● 10% fat sour cream – 200 g
● Mustard powder – 1 tsp.
● Pepper, salt – to taste.

Method of preparation:
Vegetables (except onions) and eggs are boiled in advance, cooled and peeled. Grate on a coarse grater on separate plates.
Onions cut small enough, scalded with boiling water, if you want to slightly reduce its sharpness. Gut herring, separate the fillet from the bones. Cut or divide it into small pieces. In a blender whip all the ingredients for the sauce. The ingredients are ready – start assembling the salad. At the bottom of a large and deep enough salad dish or herring bowl lay out pieces of herring. The next layer – chopped onions. Then, smearing each layer with sour cream-mustard sauce, lay vegetables and eggs in the following order: potatoes, carrots, eggs, beets. On top of the beets smear the sauce, decorate. Our herring under a fur coat is ready, you can see on the photo that externally it can not be distinguished from the familiar to everyone mayonnaise salad.
