What to replace calorie-laden New Year’s Eve dishes with? 2 healthy and tasty alternatives from the chef
For those who want to maintain a healthy lifestyle even during the holidays.
Our usual New Year’s dishes are often quite heavy on the digestive system, so I suggest you consider a couple of alternatives: Dorado fish and spinach salad.
Spinach salad with chuka and soy-cilantro sauce
Ingredients for four servings:
- fresh spinach: 200 g;
- fresh carrots: 1 piece or 100 g;
- stonka zeleru: 100 g;
- chuka seaweed: 200 g;
- soy-cilantro sauce: 130 g.
Príprava:
Krok 1. Wash and dry fresh spinach thoroughly, peel carrots and cut into straws, cut celery stalk into straws.
Krok 2. Place chuka seaweed on a sieve and defrost.
Krok 3. Prepare the sauce:
- olive oil: 135 ml;
- soy sauce: 70 ml;
- sesame oil: 12 ml;
- peeled fresh garlic: 7 g;
- cilantro: 20 g;
- peeled ginger root: 7 g.
Put all ingredients in a blender and blend until smooth.
Krok 4. Mix spinach, carrots, celery stalk, chuka seaweed, dressing and mix thoroughly.
Art Dorado
Ingredients for four servings:
- Dorado fillet: 400 g;
- sun-dried tomatoes in oil: 120 g;
- marinated artichokes: 200 г;
- salt: 5 g;
- white wine: 40 g;
- butter: 40 g;
- fish stock: 150 ml;
- leek (white part): 80 г.
Step 1: Cut leeks into rings.
Krok 2. Fry the sun-dried tomatoes and artichokes in olive oil.
Krok 3. Add the fish, salt, pepper, white wine and evaporate a little.
Krok 4. Pour in the previously prepared fish broth and simmer over low heat until fully cooked.
Krok 5. Add butter, remove the pan from the heat and stir the butter into the sauce.
Krok 6. Place the fish on a plate, top with vegetables and pour the sauce over it.
