Pancake, in other words “traditional American pancake”, was actually first cooked by migrants from Scotland and immediately became very popular throughout the United States. The dish is so simple to prepare that anyone can make it. Today there is even a special pan for pancakes: it looks like an ordinary pan, but inside it is divided into four sections, in each of which the batter is poured. But you can also cook pancakes on a regular non-stick frying pan.

How can you make pancakes more healthy?

For example, wheat flour can be replaced with whole wheat flour, cow’s milk can be replaced with any nut milk, and various healthy superfoods can be added to the batter, including flax seeds or chia seeds. To prevent the dough from becoming extremely dense, the ingredients must be mixed long and carefully, controlling its consistency.

As a topping, Americans often add maple syrup, but you can replace it with healthy analogs that will taste just as good: honey, a little melted bitter chocolate, PP boiled or mashed avocado, goat cheese and even red caviar.

How to make PP pancakes at home?

You will need:

  • eggs – 2 pcs;
  • any sweetener – 50 g;
  • alternative milk – 200 ml;
  • rice flour – 250 g;
  • leavening agent – 1 tsp;
  • melted butter (coconut or ghee) – 50 ml;
  • berries.

Separate the yolks from the whites. Beat the yolks with sweetener until white. Add milk, whisk again. Then pour sifted flour and baking powder and mix until homogeneous with a mixer for about 1-1,5 minutes. Whip the proteins to stiff peaks. Add them to the main mixture, gently stirring with a spatula. Fry on a dry non-stick frying pan under a lid until bubbles appear on the surface. Then turn over. Serve with berries and honey. Done!
