Sun-dried tomatoes

Drying is one way to preserve fruits or vegetables until spring with all the flavor and nutrients.

Preparation

  • Take dense tasty tomatoes, cut them into quarters, peel out the core (do not throw away the juice).
  • Put the cut tomatoes in a container, add salt, black pepper, rosemary, olive oil, garlic, dried oregano.
  • Mix all the ingredients well, let stand for five minutes.
  • On a baking tray lined with parchment, place the tomatoes with their backs on the parchment.
  • Send the dish to dry at 85-90 degrees, with the oven door ajar.
  • Let cure for five to six hours.

Periodically watch, remove tomatoes that have wilted faster. Ready dish to store, tightly stacked in jars.

Pumpkin dried

Preparation

  • Peel the pumpkin, chop, but not finely (when it is dried, it shrinks a lot).
  • Boil the prepared pumpkin for three to five minutes in sweet water with the addition of lemon juice from the moment of boiling, throw on a sieve, let all the liquid drain.
  • Place the blanched pumpkin slices on the prepared baking tray.
  • Put to dry at 65-70 degrees for five hours, without closing the oven.
  • Then increase the temperature to 80 degrees. After a couple hours, take out and cool completely.

Sautéed Beef with Vegetables

Stewing is one of the oldest cooking methods, it takes a lot of time, but it’s worth it. The dishes turn out flavorful and tender.

Tomlization was popular in Russia until Peter the Great brought a frying pan from Holland. For this method of cooking suitable dishes made of glass, cast iron and stainless steel, which heats up quickly and slowly gives off heat, and after cooking is finished, it keeps the temperature of heating for a long time. For example, a gooseneck (a deep metal pot with a lid) is suitable.

There are two types of stewing

  • Bring the dish to a boil quickly and then reduce the temperature.
  • Set the temperature low from the beginning of cooking and gradually reach a boil.

Ingredients:

  • 1 kg meat;
  • celery 150 g
  • carrots 70 g;
  • pumpkin 70 g;
  • bell pepper 150 g
  • spices;
  • olive oil.

Rub the meat with spices, let it stand while you prepare the vegetables.

Preparation

  • Cut vegetables into large cubes, add olive oil, spices, mix.
  • Cut the meat into large cubes and place in a duck pot or baking dish. Alternate with vegetables, close tightly and send to languish in the oven at 140 degrees. Cook for at least three hours.
  • Then remove the lid (or foil) from the dish, increase the temperature to 180 degrees and bake for 20-25 minutes to give a flavorful beautiful crust.

The dish must be tightly closed. Salt languishing dishes should be at the end of cooking. As soon as you turn off the stove or oven, let the dish stay for 10-15 minutes. Simmering improves the taste and aroma of dishes, they become more appetizing.
