How long can eggs be stored

Raw chicken eggs can be stored from three weeks to three months. Without refrigeration at temperatures from 0 degrees to +20 degrees – no more than 25 days, while at temperatures from -2 degrees to 0 degrees the term increases to 90 days.

Hard-boiled eggs can be stored in the refrigerator for up to 10-14 days. Peeled from the shell, the product should be consumed within a few hours.

Chicken eggs, depending on the shelf life and quality are divided into dietary and table eggs:

  1. Dietary eggs are those whose shelf life does not exceed seven days, not counting the day of laying.
  2. Table eggs are eggs whose shelf life does not exceed 20 days from the day of sorting, not counting the day of laying.

How to check the freshness of eggs

To check the freshness of the egg can be dropped into a glass of water: a fresh egg will lie on the bottom, a week old egg – will float up with the blunt end, and the old egg will rise completely.

Another way to tell if an egg is spoiled is to crack it into a bowl. If the egg white is pink or shimmering, it indicates spoilage caused by Pseudomonas bacteria. Some of these microorganisms, which produce a greenish, fluorescent, water-soluble pigment, are harmful to humans.

Dangers of consuming expired eggs

The main risk of eating poor-quality eggs is contracting Salmonella, which can cause diarrhea, vomiting and fever. The microorganisms die at temperatures of 75 degrees or more. However, the protein begins to curdle at 45 degrees, which means that scrambled eggs do not always have time to warm up to the right temperature. Therefore, it is better to make an omelet from fresh, just broken eggs.

In case of poisoning, the symptoms may be as follows:

  • nausea;
  • vomiting;
  • chills;
  • weakness;
  • increased body temperature;
  • pallor.

In case of poisoning, an ambulance should be called immediately.

How to store eggs

It is better to store them in the original or covered container and place the carton in the main part of the refrigerator, where there are fewer temperature fluctuations, and not on the shelf of the door. It is not recommended to wash the product beforehand: it will lose its freshness faster that way.

Also, eggs should be placed with the blunt end up (sharp end down) because there is an air sac in the blunt end. When it is on top, it helps reduce evaporation and additional moisture loss.
