Perfect morning: 7 of the best weekend breakfasts

This year’s spring holidays are an opportunity to enjoy being at home and take time for yourself. And if you have a chance to take your time this weekend, try spending a leisurely, healthy and delicious morning preparing a hearty breakfast. We’ve picked out a few different recipes that will please the whole family and please even those who are watching their figure.

Oatmeal pancake with banana and berries

Ingredients:

  • banana – 1 pc;
  • egg – 1 pc;
  • long-cooked oat flakes – 5 tablespoons;
  • vegetable oil;
  • cinnamon, salt, sugar, ginger, turmeric to taste;
  • topping to taste.

Mash the banana with a fork and stir in the egg. If you are vegan, you can substitute another banana for the egg and eliminate the sugar from the dish, otherwise it will be too sweet. Add 5 spoonfuls of grits, spices and stir all the ingredients into the bowl.

Grease the frying pan with vegetable oil and form a pancake with a layer of about 3 centimeters, so that when you turn it over, it does not fall apart. Fry under a lid for 5-7 minutes on each side. Serve the finished dish with your favorite toppings: for example, berries, fruit, yogurt, jam or nut paste.

Avocado scrambled eggs

Ingredients:

  • avocado – 1 pc;
  • eggs – 2 pcs;
  • salt and ground black pepper to taste.

Preheat the oven to 200 degrees. Wash the avocado, cut it in half and remove the pit. With the help of a spoon take out a little pulp from the center to get the shape of a boat. Break an egg and pour it into the resulting shape. Do the same with the other half of the avocado and place both parts on a baking tray. Bake in the oven for 15 minutes.

Schnichniki with cottage cheese

Ingredients:

  • rice flour – 150 g;
  • egg – 2 pcs;
  • natural yogurt – 100 g;
  • cottage cheese in a briquette – 200 g;
  • milk – 10 ml;
  • sweetener to taste;
  • leavening agent – 1/2 teaspoon;
  • a pinch of vanillin if desired.

Mix the flour, one egg, 50 g of yogurt, sweetener and leavening to make an elastic, non-sticky dough. Put it in the refrigerator for 20-30 minutes. In the meantime, mix the cottage cheese, remaining yogurt, sweetener and vanilla for the filling.

Take the dough out of the fridge and roll it out, but not too thin. Cut circles out of it using a circle or a glass. Put the filling on half of the circle and cover with the other half. To make the sausages ruddy, smear them with a mixture of milk and egg yolk. And then send them to an oven preheated to 180 degrees for 20-25 minutes.

Orange mannikin

Ingredients:

  • kefir – 1 cup;
  • semolina – 1 cup;
  • egg – 2 pcs;
  • butter – 30 g;
  • zest of a whole orange;
  • juice of half an orange;
  • sugar – 1/3 tablespoon (or other sweetener);
  • leavening agent – 1 teaspoon;
  • pinch of salt.

Mix eggs and sugar with a mixer. Add to them semolina, kefir, zest, juice, leavening agent, salt and mix well so that there are no lumps. Leave the mixture in a warm place for 30-40 minutes to infuse. Then grease a baking mold with butter, add the dough to it and bake in the oven for 25-30 minutes.

Chickpea omelet without eggs

Ingredients:

  • chickpea flour – 100 g;
  • water – 200 ml;
  • turmeric – 1/2 teaspoon;
  • red pepper – 1/2 teaspoon;
  • vegetable oil – 2 tablespoons;
  • herbs;
  • salt to taste;
  • stuffing to taste.

Sift the chickpea flour and mix it with the spices. Add water and stir well again. Let the mixture stand for 15-20 minutes to dissolve any lumps. Pour vegetable oil into a frying pan, heat it up and pour the mixture into it. Cook until the surface of the omelet becomes matte, and then turn to the other side. Lay out the dish on a plate, decorating with greens and adding the filling that you like more. It may well be spinach, asparagus, mushrooms, cheese or pesto sauce.

Granola with yogurt and kiwi

Ingredients:

  • long-cooked oatmeal – 250 g;
  • fresh nuts – 100 g;
  • coconut shavings or coconut chips – 3-4 tablespoons;
  • cinnamon – 1/2 teaspoon;
  • honey – 2/3 tablespoons;
  • butter – 20 g;
  • water – 2-3 tablespoons;
  • kiwi to taste.

Prepare the granola in advance. Mix in a bowl oatmeal, nuts, coke shavings and cinnamon. In a saucepan, stir together honey, butter, water and heat slightly over low heat. Pour the mixture into the bowl with the oatmeal and once again mix thoroughly. Put the resulting mass on baking paper and send it to an oven heated to 170 degrees for half an hour. Every 10 minutes we stir the granola so that it does not burn. Then let it cool down and pour it into a jar with a lid. Take out the granola for breakfast and add to it yogurt, cut kiwi or any other berries and fruits.

Smoothie Bowl

Ingredients:

  • Frozen bananas – 2 pcs or 1 big one;
  • frozen strawberries;
  • milk – 30 ml;
  • granola;
  • nuts, fruits and berries for topping.

Peel the banana, cut it into rings and leave it in the freezer for a few hours. After that, throw the banana slices and strawberries into a blender and whip. Pour the milk to them and whisk again. If desired, you can add some more frozen berries.

We serve it for breakfast in a deep bowl. First you pour some granola in it, then put the smoothie and lastly decorate with your favorite topping of nuts and berries.
