Zucchini caviar as in the USSR – simple and delicious step-by-step recipe

Autumn has entered its rights from the very first day, so it’s time to prepare a seasonal dish from zucchini – caviar. This is an incredibly simple and yet very useful dish, or rather, an appetizer that can be prepared even for the winter.
Zucchini caviar is a fairly useful product in a proper diet, since its caloric value per 100 grams is about 95 kcal. Thanks to the natural vegetables from which caviar is prepared, this appetizer contains a lot of vitamins and microelements that are so necessary for a person, especially in the season of colds.

You can even say that zucchini caviar is a good alternative to dietary supplements and vitamins. As for the recipe, everything is simple. We take zucchini itself as a basis, add various vegetables, oil, salt and pepper, bake, puree and serve! Here is a more precise recipe.
You will need:
- zucchini – 250 g;
- carrots – 1 pc;
- tomatoes – 2 pcs;
- onion – 1 pcs.;
- garlic – 2-3 cloves;
- olive oil – 30 ml;
- salt;
- pepper.
Method of preparation:
The first thing we do is to peel all the vegetables from the skin. Then cut into random shapes and put in a mold for baking. Preheat the oven to 200 degrees, put the mold with vegetables. Bake for 20 minutes. Then transfer the baked vegetables into a deep bowl and chop with a blender to a puree. Decorate with greens and serve!
